I love the smells of Christmas. Carmen fills her home with the smell of cedar over the winter months. Right when you step through her door, it hits you like an enveloping forest. She simmers it on her stove all day.
I tried it out. I trimmed a couple pieces off the neighbour's cedar hedge and popped it in a little pot, brought it to a boil, then let it simmer. And there was that lovely Kokum Christmas smell.
You can do the same thing with cinnamon. Michelle made us roti the other night and when she was done she simmered cinnamon on the stove. Mmmm... it cleared the air of the West Indian curry smell and filled the room with Christmas.
