Harvest Happy: Rhubarb

Rhubarb is one of the first harvests of the season.  It's ready as early as April.

If you grow rhubarb, you know that it produces more and more loveliness, year after year...
It's also similar to prunes and blueberries - helps you go.
The leaves are poisonous - don't eat them.  But you can compost them - it doesn't poison your compost.

My Dad cuts up his rhubarb into one inch pieces and freezes it. 
He also makes great stewed rhubarb.  Here's what to do:
  • Put six cups of rhubarb pieces in a pot.  Add 2 Tbsp of water.
  • Stew it on low heat until it turns liquidy and runny (like the photo above).
  • Add about 1/2 cup to 1 cup of sugar until dissolved (you can experiment with more or less sugar - to your taste).
  • I like it best served over ice cream!
